Paella-ish

There are some foods whose mighty tastiness I am powerless to resist. Prawns are one – the decent meaty sort; peppery red loops of chorizo another. So, any opportunity to combine the two in one dish was always going to be leapt upon by me.

While not entirely authentic, this take on paella can be knocked together in minutes. I always make the full quantity, even if eating solo, as it reheats well for next day’s lunch (and is guaranteed to have your colleagues wondering what on earth those delicious smells wafting from the kitchen are).

I’ve increased the meat and prawn quantities somewhat from the original recipe – mainly to ensure I use the entirety of Kish Fish’s cooked prawn bag in one go. All in the cause of economy!

A fresh and healthy start to 2011

Happy new year! I’ve started mine with a renewed determination to healthy-up my diet in a bid to reduce my high triglyceride levels, and perhaps shed a few pounds in advance of the big three-oh in May.

Thankfully, my mission is made easier by an abundance of inspiring food bloggers who demonstrate that healthy food doesn’t have to be boring. One of these is Aoife of Adventures In Veg, whose archives I have been perusing hungrily all weekend (that traffic spike, Aoife? all me!)

Inspired by Aoife, I put together this quick and delicious vegan and gluten-free dinner for the first workday evening of 2011. Not a bad start at all, at all.

Cheese? Wheat? Pfht!
