I decided – at about nine o’clock on Thursday evening, when I should have been packing – to bake something to add to the table. These cheddar and sage scones were a cinch to pull together, even while breaking in my new shoes for the big day.
Cheddar and sage scones, adapted from BBC Food
Ingredients for 12 small or 8 larger scones:
225g self-raising flour
pinch salt
55g butter, cut into small cubes
35g cheddar of your choosing, grated
6-8 fresh sage leaves (depending on size), finely chopped
150ml milk
What to do:
Preheat the oven to 220C / 200C fan. Lightly grease and flour a baking sheet.
Mix the flour (no need to sieve) and salt together in a bowl. Add the cubes of butter and mix through with your fingers until the mixture looks and feels like fine breadcrumbs.
Stir in the grated cheese and chopped sage and mix well. Add the milk and stir to combine to a soft dough.
Turn the dough out onto a lightly floured surface and knead quickly until it is a bit easier to handle (it will be stickyish at first). Flatten to 2cm thick and cut out eight larger or twelve smaller rounds.
Place the scones on the baking tray and brush the tops with a little milk. Bake for 12-15 minutes until risen and golden brown.

Heresy I know but could you use dried sage instead and if so, how much?

Not heresy, handiness! Dried sage would be grand but has a more intense flavour so I’d go with about a teaspoonful or maybe a little less for this amount of dough.

What a sensible family you have! I’ve often had to refuel with a pack of Taytos and a banana in between leaving the ceremony and arriving at the reception. There’s too long to wait in between. Next time (provided the wedding is close to home), I might try to convince someone to lay on a spread like yours!

Heels and pyjama bottoms, Caroline – I am that classy. I managed to last the day and night in them on Friday though, so it worked!
